Traditional Hummus

This spreadable delight is a crowd-pleaser. It is versatile and can be used as a dip or a spread and you can craft it to highlight multiple flavors.


Ingredients:

1/3 cup tahini

2-4 TB cold water

2 TB extra virgin Olive Oil (EVOO)

1/2 tsp ground cumin

3/4 tsp salt

3-4 cloves garlic (peeled)

2-3 TB lemon juice (roughly 1 lemon squeezed)

1 - 15oz can of chickpeas, rinsed and drained

**paprika and fresh herbs for topping


Directions

In a food processor or blender add tahini, water, EVOO, cumin, salt, garlic, and lemon juice. Puree on high until smooth. This step whips the tahini and will help ensure your hummus is creamy.


Add the rinsed can of chickpeas and blend. Until smooth. You can add an additional 1-2TB of cold water as needed. Stop and scrap the hummus towards the blade a few times to ensure an even texture.


Place in serving dish and top with a drizzle of EVOO, cumin, Paprika, or chopped parsley as garnish. Serve with pita, vegetables, or traditional swarma.
