Spring Parisian Pea Salad with Basil Vinaigrette


Ingredients for Salad:

1/2 cup Fresh English Peas

1 Watermelon Radish

1 Avocado

1 Spring fruit (I used nectarine here but use whatever is fresh)

1cup Lettuce

Feta (to taste)

Salt/Pepper (to taste)


Ingredients for Basil Vinaigrette

2 cups Basil (steams off)

1/2 cup Olive oil

3 tbs Red wine vinegar

1 tbs Lemon Juice

3-4 Garlic cloves

1 Shallot

1 tsp Red Pepper Flakes

1/4 Avocado (*optional)


Directions for Salad

Shuck peas and set aside to blanch. Cube avocado, slice watermelon radish thinly, cube feta. Bring a pot of water to a boil. Salt lightly. Add shucked peas for 30-45 seconds. Drain. Assemble your salad with lettuce, blanched peas, watermelon radish, feta, and spring fruit of choice. Add salt/pepper if desired. Adorn with Basil dressing. Mix and Enjoy!


Directions for Basil Vinaigrette

ensure all steams have been removed from Basil (leaves only). Peel garlic/shallot. Roughly chopped shallot. Add all ingredients to blender or food processor. Blend. Salt/pepper to taste.
